INTRODUCTION:

Ingredients:
- 1 cup of varsha karnataka ponni rice
- 1/4 cup split yellow anjali moong dal (lentils)
- 1 cup jaggery (grated or chopped)
- 1/4 cup ghee (clarified butter)
- 1/4 cup cashews
- 1/4 cup raisins
- 1/2 teaspoon cardamom powder
- A pinch of edible camphor (optional)
- A pinch of salt
- 4 cups water
- 2 cups milk
Instructions:
- Wash the rice and lentils together under running water and set them aside.
- In a large pot, combine the washed rice and lentils with water and milk. Bring it to a boil, then reduce the heat to simmer. Cook until the rice and lentils are soft and mushy. You can use a pressure cooker for faster cooking.
- While the rice and lentils are cooking, heat ghee in a pan over medium heat. Add cashews and raisins, and sauté until the cashews are golden brown and the raisins are plump. Set aside.
- Once the rice and lentils are cooked, add jaggery to the pot and mix well. Let it simmer until the jaggery dissolves completely.
- Add the sautéed cashews and raisins, cardamom powder, a pinch of salt, and edible camphor (if using). Mix everything well.
- Continue to cook on low heat, stirring frequently until the Sweet Pongal reaches a thick consistency.
- Turn off the heat and let it rest for a few minutes before serving.
